Quick Pork Butts on the Runt

I feel bad for hosting pics here to post on a pay-to-play site. Photobucket got greedy and this is option#2.

 

I normally do my pork butts "central US" style (225) After a recent trip to Texas, I have modified my technique(325). Did a hot cook on 6 pork butts in 2 different cookers as a private BBQ cook off to see what works best. My own designed shop built cooker turned out the best results. 6hr cook, no stall and ready to eat on the runt. 6 hours and running 160 IT on the UDS.

Getting ready to chow down now. The Memphis/KC rubs wont take the heat. Too much sugar. It will char and taste like crap. I finished off the last of my rub on these, so I tried to keep them below 350. BBQ freaks go nuts when you cross the 350 mark. That is the cross over between BBQ and grilling to the purists

Ah! I think I figured it out now. Your talking temp. The numbers in parenthesis are temps., IT is internal temperature.

10-4 on the temps. The runt is the one on the right in the first pic. I designed it to hold 4 of the big aluminum pans and cook on charcoal, wood, electric and do a cold smoke with no heat too.

Ugly Drum Smoker-UDS is (or was) the latest thing on the BBQ circuit. Everybody jumped ship on the high dollar Webers because someone won a BBQ contest cooking in a trash can. I have been doing that for 30 years. Now a $50 cooker costs $300.

Man, that just aint right!!  Wife is asking me to burn some hot dogs for dinner, and I have to look at this..... ain't right I tell you!!  At least I will have some of my home made krout.
