I had to upload a pic here so I could link it to another site, so I felt obliged to start a thread. I built this to be the Swiss Army knife of backyard smokers. It will do hot and cold smoke, electric, gas, charcoal, chunk and wood fired BBQ/ grill/ smoke/ fry. The BBq snobs dont like it because it would make their $3,000 treagers look like cr@p. It isnt much larger than the $100 electric smokers, but can do 10 more. I dont want this to sound like a sales pitch, because it isnt on the market yet. It will "sleep" 3 full slabs of ribs with a water pan and hang 6 like the over priced PBC's, or UDS, or as they have been called for at least 50 years.. trash can cookers.
I did a 4 hour burn in with wood to test the temp control without adding fuel. That will get you through the prime smoke time, then swap over to electric or gas in less than 30 seconds to finish the cook. That works great for the long brisket or butts over night cook.
This concept is a big WTF in the BBQ world because they are all driven by superstition, myth and cook on what ever did good last year on the circuit.
