Take your receipe for corn bread and use the batter to make pancakes. Then pile pull pork bar-b-que on the pancake. Or you can make a thick chili and put that on the pancake. shredded cheese and chopped onions/jalapenos as you please

Whenever my girlfriend's mother makes us Pancakes, we usually have a bunch to spare --enough for two more feedings, generally.  

I make a real tacky beef or sausage gravy, seasoned to taste and sweetened with brown sugar to put on top.   It's always a favorite --and really sticks to your ribs.
