Have a few friends coming out Monday afternoon.

The wife said she had Two Briskets, a Pork Roast and a Turkey Breast that needs to go in the smoker early Monday Morning.

So will see how the modifications to the smoker will work then.

Good Luck, Sounds like a great time.

I need to fire up a smoker soon. Here lately my only outdoor cooking has been on the gas grill due to time constraints.

Sounds good. I've never had food done in a smoker. I'ts not common around here.

Well it will take about 8 hrs to cook, so come around 2:00-2:30 pm for a late lunch.
Let me know if you need directions.

I hope you all enjoy the great food and spending time with friends and family. We smoked a brisquit (sp?) today and it turned out terrific. Had dinner with my parents which made it even better :D

Well everything turned out pretty good and we had a great time yesterday.

The baffle I put in was only a partial sucess. It did what I wanted but would not let me go over 225 degrees.
I took it out about halfway through the smoke process. I am on the right track but need to revise it some.
I did notice it allowed me to maintain a muche more even temp without the High low Spikes.
So I just need to rework it to allow more draft.
I think a new charcoal basket slightly lower in the fire chamber , a baffle mod and lowereing the stack inlet will put me in the ballpark

The real Plus for the day, was the wife said my smoker was too small for the church get togethers she wanted to do.
So I'm going to be working on the plans for a bigger unit.
