My wife got this recipe off of Pinterest & fixed it today for lunch. I will warn you it's so good I could hardly sit still eating it. Just a tip from the misses if you make your own pie crust make the bottom a little thicker than normal because the tomatoes can be a little runny. Hope you enjoy!

Tomatoes not my fav, and wouldn't think in a pie?  But, that does look kind of Breakfasty and would be good for that.  Bacon makes everything good, heh! Lots of goodies in that mix.

We have a over abundance of tomatoes also.  Cooked up 3 - 5 gal pails full, run them through the blender a bit to juice them and into the freezer in quart bags.  Will be good for stew and chili this winter.  Tomato pie don't sound good at all to me but I don't like cooked tomatoes unless they are juiced.

 

Google Tomato Pie and you will find all kind of recipes.  Didn't any look or sound good to me but then that is just me.

We eat salads with tomato wedges, buffalo mozarello, chopped basil and basalmic vinagrette. Those ingredients are good together.

That looks like something my wife would enjoy. I need my tomatoes processed first. There is something about a raw or just cooked tomato that makes it want to come out faster than it went in.

That's like a mozzarella caprese pie. Interesting. I'll see if the wife won't give it a try. If she doesn't I might. She's not the biggest fan of tomatoes so I could see having to make this one myself.
