I upgraded my garage machine to 16.04 and here are the thoughts so far.

Machine specs
- athlon II 4850E dual core

- 3 gb of DDR2 ram

- SSD drive

- old Zotac m-itx motherboard from ebay

Install went smoothly and rebooted without problems.  Machine performance is similar and the machine temps match those as before.  Since I am running MATE I cannot speak to the changes to Unity

I will have to give it a go in a VM. Don't know when I will get a chance to try it out but I would like to check out the latest Ubuntu.

Ran a few more updates on both MATE machines and stability has improved.

Updated from 15.04 and things are great.  I few glicks I was having seem to have gone away.  Will tell you more after some FreeCad work.  That is where I was having hangs in the Video at times.

Grabbed another machine for the garage and installed 15.10 then upgraded to 16.04 on it. Went very smooth too.  More than anything, I am amazed at how fast this one is.

Machine specs
Dell Optiplex 790 USFF Q45 chipset (I think)

Core2Duo E7500

3 GB ram

64 GB SSD drive (borrowed from another machine)

Doesn't Ver 16 have Snap incorporated into it?  If so how do you like it?  Can you tell any difference in package(s) installation?

How do you like MATE ?

I left Ubuntu a while back because of unity.

I would like to go back to it.

Right now in using Linux Mint

I really like MATE, even more than Mint.  I used Mint for about 2 years on a couple different machines and MATE was an easy switch.  I also like that you can make MATE feel more like Windoze or MacOS or some other custom layouts.  Unity was OK but MATE is the choice for me.  Have you considered installing the MATE shell on your MINT install?  One of my machines has MATE/LUBUNTU/UBUNTU shells on the same base install.

I also have it on a newer Dell 7010 USFF machine with an i5 processor and 16 gb of ram.  Works great and rarely hits the HD.

Yes it is included.  Have no experience with it though.
