how do the diesel pulling tractors wire a kill switch

Since your not using a turbo you can still hookup the air guillotine to shut the air off. What kind of fuel pump are you using? You need to wire that to the kill switch as well.

The stock one that came on it no wires to it at all

Need to get a new pump then. I run a black series pump from jegs (120$) Runs about 20 pounds or so.

Not sure but if I read the rules correctly I think you don't need to add a electric fuel pump but if you have one its needs  a kill switch on it. What I have done in the past with the same setup as 722 is used a electric solenoid to turn the fuel on and off on the injection pump. When you turn on your key this energize the solenoid turning on injector fuel (instead of a cable). Wire the kill switch in the circuit so if it gets pulled this will  kill power to solenoid killing engine.  Along with a air shut off to intake as Mike spoke of.
