I know they are basically the same tractor, but besides paint and the tilting steering wheel what were the differences? For comparison sake let's say S-14h is what I'm comparing.

The first run of the Ariens S-14, model 931002, is the same. The later model number S-14 would have various upgrades. Brakes, different hydro, and different electrical setup.

Is there any online sources to find new holland manuals? I have one for my Ariens but I want a breakdown for the new holland especially the tilt steering assembly

Does anybody have a new holland mower in their collection? I would love to get some pics of how the tilt steering works and what's all involved with it

I think there are several here. I don't know if they have the tilt steering though.
