This cake has a history. I have always loved Blackberry cobblers. A few years after Terry & I were married, she decided to surprise me with a homemade blackberry cobbler. Well, she messed up and made a cake mix instead of a cobbler mix. That was the most delicious cake I ever ate. But I screwed up and teased her too much about it and she would never do it again. I decided it was time for another one of these and bought a yellow cake mix and some blackberry pie filling to give this a try. I have used the pie filling before and made cobblers with it, so I new it was good stuff. Today was the day.

Here's the fixin's:

I mixed the cake batter as directed and poured about half in the pan. Spooned in some blackberry filling, then poured in the rest of the cake batter. I used about half of the filling!

Blackberry anything is GOOD.  Even mistakes. Haven't had blackberry or black raspberry for some time.   Hope it turns out well enough for you.    :thumbs:   Rick

When I was stationed in Germany in the Army, I rode my bike to work most days.  There was a huge blackberry bramble in a field outside the main gate, and I used to carry a 5 quart Ice cream bucket and a pair of gloves in the basket on my bike...

 

I'd stop at the blackberry patch after work, put bail of the bucket over my left arm and a glove on the left hand to hold the canes, and picked with the right hand (no glove), and just dropped the berries right into the bucket.

 

The wife made some wonderful jam, and also blackberry syrup, plus we froze a bunch of it.  Over in Europe they have milk that can sit on the shelf unrefrigerated for several months-- The Germans call it "hah milch"-- hah is how they pronounce "H" and "milch" is milk, of course.  I guess the name comes from the high heat they use to process the milk -- hoch heizung or something like that.

 

Anyway, the milk came in 1 liter cartons, and had a foil liner.  We'd open the tops of the cartons after we drank the milk, rinse them out and then fill them with blackberries, tape the lid down and freeze them.

 

BTW, the Germans used the same type of canning jars your grandmother did... glass jars and a glass lid that sat down inside the mouth of the jar with a big red rubber gasket to seal it and a wire clip to hold the lid on... we brought a couple dozen back with us--full of jam--don't know how Customs overlooked it, but we didn't say anything...
