We ate dinner (noon) at Golden Corral today, so no real meal this evening. I had a couple slices of turkey bologna, may have another light snack later, few nuts, maybe .

A group of us got together for pot luck. Baked ham, tomato rice casserole, carrot salad, baked winter squash, cottage cheese pyrogies with sour cream, raw sliced sweet onions, pickled beets, cranberry punch, and for dessert, Flapper pie and coffee. I'm fit to burst!!

Made some 'hamburger soup' tonight! Hamburger, can of green beans, can of corn, carrots, potatoes, tomato sauce and paste. Some garlic powder, along with onion powder. A good bit of crushed red pepper and Tabasco for added flavor! After simmering a bit, some crackers go well with it! No measuring cups here!

Make a standard Graham Cracker crust, put in pie plate and bake until the crumbs have set. Then mix the following:
2 cups milk
3 tbsp. cornstarch
1/4 cup sugar
2 eggs, separated
1 tsp. vanilla
Mix milk, cornstarch and sugar in a medium saucepan. Place over medium heat and stir constantly until mixture thickens.
Separate eggs and beat the yolks well. Add some of the hot mixture to the yolks, stir to blend and then stir back into the hot mixture. Stir over medium heat until thick and smooth. Remove from heat and add vanilla and cool a bit, then pour into crust and let cool.
Beat egg whites with 2 tbsp. sugar until stiff and cover the custard mixture, bake until meringue browns, and cool completely.
Why this is called "Flapper" I have no idea, but it is a standard at all fall suppers and potlucks up here. Enjoy!!
