Man oh man what a dinner we Smoke a couple wild pig hams that i caught. They were on the smoker Which is a piece of 24 inch pipe ( thick wall) mounted on a trailer. Wood was pecan. Homemade BBQ sauce (Dale Secerat Stuff). Baked taters, Slaw with Homade Cake. Now for the snooze.

Ive always used oak to smok with. Is there really much difference in the final taste?

We always smoke with cherry. Haven't tasted meat smoked with other wood and wonder what the flavor difference is and if it is really noticeable. Interesting the other woods that you'all use.

There is definitely a difference in the taste of woods used to smoke with. The fruit woods are really good, especially applewood. I think oak gives a great flavor, tends to have a little more bite to it. Hickory is awesome as well.

Been enjoying applewood smoked bacon this week. It's good, but I prefer hickory smoked. Yes, there is a difference!

Smoked a Pork Butt last week with Cherry for the first time, To me it was a little bitter, so I trimmed it and all was Good. Pecan is my choice.
