I've always used a syphon paint gun before. Now I have a small hvlp. What is the difference in the paint / thinner mixing ratio?

Only HVLP I have seen that is much diff is those kind that use a Vacumn cleaner like motor, have big hose to gun and use little pressure at all. Eastwood pushes those.  I think the HVLP gun you still use on your compressor has mix about same as any. Maybe I'm wrong, but this was my observation. Just the pressure needed is lower at working end.

Paint will mix the same and on some guns you can turn up the air pressure and it will spray like a regular gun
