I just received a double pulley for my gen/starter so I can power a hydraulic pump off of it. What is the best method to loosen the nut and then tighten it on the new pulley without the generator spinning?

An Impact wrench is the best way its done.  You need a good fast one.  Nail it once, let up, and nail it again. It always works for me.

:ditto:

If it wants to spin you can hold it with your hand, but wear a welding glove or something similar to grab onto it. You can really tear up your hand if you don't (I speak from experience, in a hurry and wasn't thinking).

Use a strap wrench around the pulley.
