How about posting some recipes and methods from North to South, Canada to Mexico.
I am getting tired of package mix.

What brand of "package mix" do you use?

I like the Jiffy brand mix, also. Add milk and egg per box directions. I add about a 1/4 cup of sugar, some whole-kernel corn (can use some creamed corn, but not too much.... it'll make the mix soupy. If creamed corn is used, cut back on the milk), some red pepper powder, and some minced red/green jalapeños, mainly for color. Dump it all in a greased (I use spray olive oil) 9"x9" glass baking dish (for one box worth... 11"x13" for 2 boxes). Add or delete to suit your taste!

Grnspot, I like the Jiffy mix, but it seems a little bit too sweet, of course, this is the Muffin mix about all we can get locally. I have tried others, Martha White, Pioneer, and various store brands like Kroger.
I would like just a good basic cornbread that I can get in my habits, that I can add bacon, etc. Just starting with a good yellow corn meal and going from there.
Lifer, that sounds interesting, May have to lighten up on red pepper and jalapenos. I might mess up the ozone layer.LOL
