The black walnuts and mushrooms will make awful wine, IMHO.

 And I'm not willing to try either LOL But they sure do make for good eats !! :thumbs:  :beer:

 Man , things are getting pretty busy ! I have more batches cooking than carboys and batch buckets can handle DOH!! Got a bunch of really ripe peaches and had to get them going or loose the bunch. Anyway, they are fermenting, grapes need to be drained off and put in the carboy, and all the others I have going need a racking once more before bottling... Bottling...  I need to get about 8 more cases!! But it tastes great so far , except the peach wine made from peach jam doesn't have much flavor, plenty of alcohol though? Asked the wine guru and he said this was very common and sugested I add consetrated peach flavoring (this is what the big guys do ) So I am .

 All the berry wines are awsome!! And with 9 gallons of the stuff, it had better be good LOL .

 

 Has anyone ever tried tomato wine ?? I never did... I heard a lady at the brewers store say it was very good, but honestly? I don't know if I'm game to try it? I do have a recipe for it in my wine makers book ? Maybe I'll try a gallon and see what its like ?

Well things are starting to wind down a bit! Whew! Got the first batches of berry wines bottled up and now only have 3 gallons of blackberry wine left to rack 1 more time and then it can get bottled. The peach jam wine finally cleared up and I bottled that too.
The grape is looking nice clear too. This stuff will take a while to ferment.
I also made some fresh peach wine from a pile of peaches my dad had. This stuff almost looks like milk its so cloudy. But this is all par for the coarse i have been told?
Also want to make some apple wine and some mead from honey before snow flies??

WOW! the blackberry wine I made is AWESOME!! We polished off 2 bottles tonight and got rave reviews! I'm very happy with the end results.

Peach wine cleared up and tastes pretty good. It is a dry wine and pretty potent! I may "blend" it with some white grape juice to take the edge off it a bit, as it is strong and bites back..
Question for the grape wine makers: How long does concord grape wine need to age in the secondary before bottling ?

Well I'm sure glad I have enough frozen blackberries to make another batch!!! HOLY CRACKBOTTLE !!! This stuff is DYNAMITE!!! I'll be staying right on top of them from now on !! They make an incredible wine !!!
I just wish the grape stuff was done as quickly LOL.
