I'll be starting the smoker in about an hour. Ribs, a small pork brisket, hotlinks, bologna, stuffed Jalapeños, cheese, pig candy, and a fatty.

Steve will be cooking us a couple sides of ribs later. Got tater salad and baked beans to go with it!

Pig Candy is bacon coated in brown sugar and a bit of cayenne powder, smoked until inmost done, then you drizzle a bit of maple syrup over it, and when done, coat it in sugar and cinnamon. YUMMM!!!

A fatty is a pound of sausage rolled out flat, stuffed with whatever you want rolled up and wrapped in bacon. I used a small onion, a jalapeño, just a little bit of canned spinach, and a drizzle of salsa. Their ain't nothing like 2 lbs of smoked Pig Fat to get you going in the morning.

Hello to everyone out there in GTtalk land and I hope and pray you have a safe and enjoyable  Independence day.  Please don't forget to say thanks to your fore fathers for this day.  Their sacrifices and the sacrifices of our loved ones throughout our country's history gave us the reason for this celebration.

 

I started up the smoker this morning at 5:30 am, got a couple of chickens going on it right now.  All the kids are showing up sometime today.  I have been messing around with my new toy, a mid-sixties Swisher Ride King with a Tecumseh on it. 

 

This evening we will go and listen to the Liberty Symphony Orchestra while  we watch fireworks.  My daughter plays a viola in the Symphony.  It is pretty cool to hear them play while the show is going on!
