As much as I love my smoker I found I could smke roast with potatoes on my gas grill by browning the roast first with both burners on then shut one down and placed the roast on the side that the burner is shut down. I then place a pan of water filled with wood chips over the on burner. Takes about 2 hours and I still get the smoke ring on the outside and the roast comes out perfect. In fact doing whole chickens tomorrow according to the wife with fried potatoes wrapped in foil.
