Sorry I missed this post, I though I answered it already.


You basically place a metal container filled with sand in the middle, this will help to buffer the heat. You then place the charcoal in the circle around the outside of the can. You need to place a divider somewhere in the circle, that doesn't burn, something like a short brick. You then light one end of the charcoal, and like it burn around to the other end. You can place your wood chunks along the way, to burn as the fire gets to it. This method will allow for a more even heat, and will last a bit longer.

I used to use the pan of water trick. Did a great job keeping the meat from drying out too much! Now I just go to Aaron's!

Kenny Could you possibly post a picture of your whole smoker? I think i know what it looks like but i am looking for ideas for a smoker.. I think what i have been thinking of building is what you have..
