Keith, that looks great.  Just what the doctor ordered for the doldrums.  I just told the fiance I'd rather stay in for dinner than go out.  She said why,  I said January depression.  We went out for a walk, that coffee cake would have been nice to come in from the cold to.

 I love to  cook and grow things in the garden too. I just got a pile of seeds at the local feed and seed store and my first seed catalog yesterday :thumbs:  :dancingbanana:

 That cake is making hungry! You are getting an early start. I remember when I was a boy dad would go through the seed catalogue and make up his order in February every winter.

Recipe please! Our seed catalogues started coming with the first Christmas cards---  hence all the phone calls we made in stead of getting cards out on time! Short of fresh stuff during winter, if we don't grow it, we don't eat it. Coke excepted, of course.

Blueberry Coffee Cake (You can use almost any fruit berry in this and it will work )

1/2 teaspoon cinnamon

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon salt

1/4 cup vegetable oil

3/4 cup white sugar

1 egg

2/3 cup milk

2tablespoons of melted butter

1 cup+ blueberries

 

1/3 cup all-purpose flour

1/2 cup white sugar

1 teaspoon ground cinnamon

1/4 cup butter, softened butter

1 table spoon of( sugar in the raw)

 

 
Directions
 
  1. Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9 inch pan. Sift together the flour, baking powder, 1/2 teaspoon cinnamon and salt. Set aside.
  2. In a large bowl, whisk together the oil,2 tablespoons of butter, sugar and egg. Stir in the flour mixture alternately with the milk, mixing just until incorporated. Fold in the blueberries. Pour batter into prepared pan. Cover with streusel topping.
  3. For the topping: In a bowl, combine 1/3 cup flour, cinnamon and 1/2 cup sugar. Cut in the butter until mixture resembles coarse crumbs.
  4. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
