Crock Pot Chicken Cacciatore

I made this the other day and had it last night. It was good.

Since you expressed interest Maynard, I'm giving you the recipe here. (And everyone else who is interested)

I used

4 boneless chicken thighs ( I use free ranging, no hormones etc added chicken )
1 29 oz can of tomato sauce (use two 15 oz cans if that's what you have)
2 large onions chopped
2 large bell peppers chopped
1 half pound of sliced mushrooms
2 Tbsp dried parsley
2 Tbsp dried basil
2 Tbsp dried oregano
2 Tbsp sugar
about 1 cup of water (or chicken broth)
I poured enough sauce to cover the bottom of the crockpot, layered in the chicken. Next I layered on the mushrooms. I then layered the peppers, then layered the onion. I added the rest of the sauce and then about 1 cup of water. The liquid was just almost up to the top layer of onion.

I set the crock pot on low and let it go for about 12 - 14 hours. 16 hrs would not hurt it. I did nothing to it until the end. Then I stir it to break up the chicken thighs. I served it over rice.
